Prunus species/United States/Kernel. The oil of bitter almond is produced interchangeably from the kernels of the bitter almond, peach or apricot. There are two major components of the essential oil, benzaldehyde and prussic acid. Prussic acid (hydrocyanic acid) is a harsh by-product, formed along with the benzaldehyde during extraction. The prussic acid is removed from the oil leaving the benzaldehyde. Almond oil sold as FFPA means "free from prussic acid." The oil has an intense almond/cherry aroma.
